Chicken thighs bone-in or boneless: which format suits a kitchen, a shawarma shop or a store

Two raw skin-on chicken thighs on a wooden board

The thigh is the juiciest part of the chicken and, for that reason, one of the most requested: it stays tender in the oven, on the grill, in a stew and on the shawarma spit. The question when ordering is not “thighs or not” but “bone-in or boneless, chilled or frozen”. The answer depends on what you cook and how much labour you have on shift. Below are all the thigh and leg-meat formats in our wholesale chicken catalogue, and what each one is good for.

Bone-in thighs: two formats

Chilled, for the counter and the daily kitchen. “Chicken thighs Qualiko, chilled, 0.9 kg trays (7.2 kg case)” comes in trays that go straight onto the shelf. For a kitchen, the same product means meat that goes into work without thawing.

Frozen, for stock. “Chicken thighs Qualiko, frozen” has two pack sizes: 2.5 kg bulk packs, in cases of 10–15 kg, for whole oven trays, and 0.9 kg bags, 12 to a case, for the freezer shelf or for small kitchens. The thighs are individually frozen, so you portion without thawing the whole lot.

Boneless leg meat: three options

Which format for which dish?

Oven and grill

The bone-in, skin-on thigh is the classic piece for the oven tray and for the grill: the bone and the skin protect it from drying out. For boneless portions on the grill, skin-on boneless leg meat gives the same effect but can be portioned to the gram.

Shawarma, doner, kebab

The vertical spit takes boneless leg meat, usually skinless: it layers well and does not dry out at the sliced edges. The 10 kg boneless thigh fillet is the simplest choice for large volumes. The other spit items are on the shawarma and doner meat page, and how to organise supply for a shawarma shop is explained in our guide meat supplier for a shawarma shop.

Skewers

Cubes of boneless thigh stay juicier on the grill than breast cubes. If you do not want to marinate yourself, the catalogue also has “Chicken thigh mini skewers “Tomato and Basil” Qualiko, chilled, 1 kg”, ready to go on the heat.

Stews, pilaf, pies

For long cooking in a sauce, boneless leg meat is more forgiving than breast. Bone-in thighs can be used too, if serving “on the bone” is acceptable on your menu.

Bone-in or boneless: how to compare the cost

The price per kilogram of bone-in thighs looks lower, but part of the weight is bone and skin. To compare properly:

  1. Weigh a batch of bone-in thighs (fully thawed, if frozen).
  2. Bone them the way you normally do and weigh the clean meat separately.
  3. Divide the price per kilogram by the percentage of clean meat you got.
  4. Add the cost of labour and compare the result with the price of boneless thigh.

When your staff are on shift anyway and the bones go into stock, boning in-house can pay off; when the kitchen is working at full stretch, ready-boned meat often works out cheaper per portion. The full method is in our article on meat yield and cost per portion.

What to check on delivery

For chilled thighs: the temperature at unloading, intact packaging and the date on the tray. For frozen ones: the pieces should be separate and the bags should not have a lot of ice at the bottom — otherwise the goods have warmed up in transit. Thawed thighs must not be refrozen, so thaw only what you will cook in the next few days.

How to order

The minimum order is 70 kg and can be made up of several items: for example, boneless thigh for shawarma, bone-in thighs for the oven and drumsticks in the same delivery. Frequently asked questions

What is the difference between a chicken thigh and a chicken leg?

The thigh is the upper part of the leg, the meatiest part. The leg is the whole limb, that is the thigh together with the drumstick. “Boneless leg meat” means the meat of the whole leg, taken off the bone.

Is boneless thigh more expensive than bone-in?

Per kilogram, usually yes, because you are not paying for the bone and you are not spending time boning. Compare the cost per portion, though, not the price per kilogram: weigh the clean meat left from bone-in thighs and divide the price by it.

Which chicken thigh suits shawarma?

For the vertical spit, kitchens usually use boneless leg meat: skinless boneless thigh fillet, frozen in 10 kg cases, or boneless leg meat. All the spit items are gathered on the “Shawarma and doner meat” page.
