Frozen turkey meat

This category holds nine frozen turkey items from the full carcass breakdown: boneless breast sold per kilogram, thigh and drumstick, wings, necks, tails, gizzards, liver and minced turkey. Everything except the breast comes in 10 kg cases, and prices are quoted per kilogram, VAT included.

The mix of cuts suits very different kitchens. The breast is lean white meat with no bone: it slices into schnitzels and medallions with almost no trim loss, which is why canteens, caterers and kitchens working to a costed menu ask for it first. Thigh and drumstick give red poultry meat — roasting trays, slow cooking, rolled roasts from the boned-out thigh. Minced turkey holds its shape better than chicken mince and gives a clean single-species base for meatballs, burgers and prepared foods, which is why sausage makers and food producers buy it. Necks, tails and wings are bone-in pieces for stocks, soups, aspic and generous oven portions. Liver and gizzards run larger than the chicken equivalents, so they clean and portion faster when you work in volume.

The main thing to weigh up is the meat-to-bone ratio. Breast and mince yield nearly everything you pay for, so the price per kilogram is higher but nothing is lost in preparation. Necks and tails are cheap per kilogram precisely because part of that weight is bone and collagen — which is what a stock needs, not what a main course needs. The 10 kg case fits steady turnover: if yours is slower, take fewer lines and finish them rather than keeping several cases open. Store at −18 °C, and thaw slowly under refrigeration so the meat keeps its juices.
