This section holds 14 frozen pork items: boneless cuts, bone-in pieces, processing meat and offal. The boneless cuts — collar, loin, leg and shoulder — come in 20 kg cases, pork belly in 18 kg cases, while spare ribs, tenderloin, liver, tongue and ears come in 10 kg cases. Alongside them sit pork trimmings 70/30 and 80/20, back fat off the shoulder, and trotters. Everything is held at −18 °C.
The buyers here are butcher shops and sausage makers who need raw material that behaves the same from one batch to the next, shawarma and pizza kitchens portioning every day, canteens and HoReCa kitchens running a fixed menu, and shops selling meat by weight.
Two things decide the choice: yield and case size. Boneless cuts are easy to cost, since close to the full case weight goes into production. Ribs, trotters and ears are bought for flavour, collagen and price rather than yield. With trimmings the number says it all: 70/30 gives the juiciness mititei and fresh sausages need, while 80/20 leaves fat control in the hands of whoever writes the recipe. A 10 kg case suits an item that appears on the menu now and then; 18 and 20 kg cases suit the pieces worked on daily. Thaw slowly in a chiller at 0–4 degrees rather than in warm water: drip loss stays low and the meat stays firm enough to cut cleanly.

Does the 70 kg minimum have to be one single product?
No, the 70 kg can be made up from several items in this section. Goods ship in full cases: 10 kg for ribs, tenderloin, liver, tongue and ears, 18 kg for belly, 20 kg for the boneless cuts. For trimmings, back fat and trotters the operator confirms the case weight together with stock.
What is the difference between 70/30 and 80/20 pork trimmings?
The meat-to-fat ratio. 70/30 is the standard raw material for mititei and fresh sausages, where the fat keeps the product tender during cooking. 80/20 is the leaner option, for lean mince, patties and fillings, or when the fat is added separately to your own recipe.
