
A canteen rarely fails an inspection because of the cooking. It fails because a document is missing. If you run a school canteen, a kindergarten kitchen or a staff canteen inside a plant, you do not pick a meat supplier by the first quote — you pick the one who can put paperwork on the table on the day the inspector arrives.
Here is what to ask for, in the order it makes sense to ask.
What to ask for before the first order
- Full legal details. Company name, IDNO, and the address of the warehouse the goods actually leave from. carne.md is operated by Melion-Prim SRL, warehouse at str. Valea Bicului 9, Chisinau. A supplier who dodges that question has already answered it.
- Their standing with the producer. Official distributor, or a reseller buying from someone else? It matters, because only the first can hand you a document chain that reaches the plant. We are the official importer and distributor of Qualiko (producer MHP) in the Republic of Moldova.
- The producer’s certificates, as readable copies. Not logos on a website — the files themselves. Ours open as full-size scans on the About us page and on the Qualiko product pages.
- A catalogue with weights and packaging. A canteen plans in cases, not in theoretical kilos. In our catalogue the pack weight is written into the product name.
The certificates, and what each one actually covers
This is where mistakes are common, suppliers included.
- BRCGS Food Safety — food safety of the production site. This is the certificate that concerns the meat.
- Halal — a poultry certificate. Do not request it for pork, beef or turkey; no such document can exist.
- GMP+ Feed Safety — a feed certification: blood meal, feed fat. It is not a meat certificate. It belongs in the producer’s traceability file, not in your product specification.
- GLOBAL S.L.P. (Smart Livestock Practices) — livestock rearing practices.
All four belong to the producer, MHP, and concern the Qualiko poultry line. For pork, beef and turkey, the relevant paperwork is batch and import documentation, not Qualiko certificates. A supplier waving a Halal certificate over a case of pork collar either does not know what they are selling or is counting on you not knowing.
What should arrive with the goods
On every delivery, not only the first: the invoice, the documents identifying the batch — batch number, production date, shelf life — and the original label on the packaging. Check them at goods-in, not the next morning. Once you have signed, it is a different conversation.
One thing we would rather say plainly: the exact list an inspector asks you for depends on the type of institution and on your own internal procedure. We supply the batch and producer documents. The canteen’s own file stays yours, and it is confirmed with ANSA, Moldova’s food safety authority, not with your supplier.
Kindergarten, school, plant: what actually changes
Kindergarten and school canteen. You want clean cuts that portion easily and are simple to justify in a standard recipe specification. The catalogue lists them as “Chicken breast Qualiko, frozen” and “Chicken thigh fillet Qualiko (boneless, skinless), 10 kg”; if the kitchen works from chilled, the equivalent is “Chicken fillet Qualiko, chilled”. Mechanically deboned meat (MDM) in the frozen chicken category is raw material for industrial processing — not a line on a children’s menu.
Staff canteen, several hundred meals a day. Cost per portion and butchery loss drive the decision, so: large case, simple cut. Chicken leg quarters Qualiko, block-frozen (monolith), 10 kg, Chicken legs Qualiko, dry-frozen (IQF), 14 kg, and on pork Pork leg, boneless, 20 kg or Diced pork (goulash cut).
Volume is calculated, not guessed: portions per day multiplied by the gram weight in your own recipe spec, multiplied by the days between deliveries, plus the thawing and cooking loss your kitchen has already measured. Round up to whole cases. Our minimum order is 70 kg, which an institutional kitchen usually covers with a single line item.
Public tenders, bank transfer, VAT invoice
For a tender file or a contract with a state institution, tell us in the first conversation exactly what the procedure demands: company details, producer certificates, product specifications. We prepare what we have and tell you plainly what we cannot cover. That is cheaper for both sides than finding out on submission day.
On payment: carne.md does not process online payments. The site is a catalogue. Orders go through the order form, by phone or by WhatsApp, and the payment method and accounting documents are agreed when the order is confirmed. Price, stock and lead time are confirmed at the same moment — which is why the products say “Price on request” instead of a figure that would be stale by the time you read the page.
